Tabouli Wrap

Chop up 4 baby tomatoes and the same amount of cucumber, about a tablespoon each of lemon juice and olive oil, 2 tablespoons cracked wheat (don’t be stingy with these) Put that in a bowl and let it sit for a bit (~30min?) so the cracked wheat can get soft.

Chop up a spring onion, and also chop up about 1.5x that much parsley. Put that in, stir it all up. Tabouli, done.

Then grab some pita bread, get some greek yoghurt on it, add some cos lettuce if you wanna bulk it up a li’l bit, go to town with the tabouli just throw it all over it, tabouli is the best.
